Courgettes and aubergines




An excellent dish of baked vegetables suggested by Rosa Caccavo, who writed to us to suggest her Vinchef-based recipe.

Aubergines and courgettes, the ideal vegetable side dish for a simple and light recipe with mozzarella and olives.


Difficulty: easy

Time: 30 minutes


Ingredients for 4 persons: 2 aubergines, 4 courgettes, oil, Vinchef, salt, 
garlic, origan



Preparation: Carefully wash all the vegetables and cut them into thin slices: Lavare bene tutte le verdure e tagliare a fettine sottili: blanch in a pan with salt water for about 10 minutes.

Then drain and dry carefully, range in a baking tin and bake at 180°C for 10 minutes. Take out of the oven and dress with a trickle of oil and Vinchef: add a clove of garlic apart and let everything flavor.
